The Art of the Ovens
Wood-fired Neapolitan pizzas are baked in our 950-degree wood-burning oven for approximately 90-120 seconds.
The leopard-spotted crusts, tender interiors, and smoky flavor define the Neapolitan style. Each pizza is a careful balance of fresh dough, high-quality cheese, and vibrant toppings.
New Haven-Style
Our New Haven-inspired (called apizza, pronounced ah-beetz) pizzas are baked in our state of the art masonry deck ovens for approximately 4-6 minutes, depending on the type of pizza. Pizzas with more toppings require longer bake times and therefore will not cook properly in our wood-fired oven. The longer bake times in our multi-deck oven ensure that the pizza with more toppings is cooked properly.
Farm-to-Table Excellence
We source the best local ingredients whenever possible. From fresh red winter wheat berries for Alamance County for our dough to locally grown pork and beef for our house-made Italian sausage and meatballs. Every element reflects our commitment to freshness, flavor, and sustainability.
